5 Fast, Friendly, and Healthy Tot Meals

You gotta have your go-to’s for quick meal throwdowns

…when you’ve got homework and readings for class. I am sharing my faves that meet the necessary is-it-good-for-them and pass the will-they-actually-eat-it test. I rotate them often, but no more than in the same week.

Here are the 5 Fast, Friendly, and Healthy Tot Meals:

1. Spinach Ravioli and Chicken Tortellini

I buy the Organic kind from Costco, and mix up the two (cooks in 4 min!) in organic marinara. A great shortcut if you don’t use up a whole jar is to portion it out in silicone muffin cups and freeze, then store in a bag. Done and done.

I also have Pesto in muffin cups in the freezer to change it up.

Another tip – add a splash of half and half to make Rosa or Creamy Pesto!

2. Chicken Quesadilla

 Cheese between 2 tortillas plus minced chicken breast and black beans. A dollop of Avocado and some cherry tomatoes. Another tip is to freeze portioned cooked chicken and pull out what you need. I love these silicone storage bags that are safe, super easy to clean, and zero-waste!

3. Breakfast for Dinner

Scrambled eggs with veggies you have on-hand, like peppers, onions, spinach, mushrooms…

4. Freezer Muffins

Get your kiddos in on the fun! Mix a batch of these yummy award-winning low-sugar apple-spinach muffins and or make banana and toss in sweet potato or spinach and freeze for hangry tots.

5. Sloppy Joes

Just brown the meat and stir in Tomato sauce- I also add shredded carrots and celery or red pepper to hearty it up. I like to make little cups for the boys by scooping out some of the bun.

The key is to mix up the rotation enough so that they aren’t eating the same meal too often. And throw in some organic mac and cheese and hot dogs works fine, too.
